Za-atar

¼ cup sumac

2 tablespoons thyme

1 tablespoon sesame seeds

2 tablespoons marjoram

2 tablespoons oregano

1 teaspoon salt

I think you’re supposed to do this with dried herbs but if you’re lucky enough to have fresh just double the quantities of them and get on with it. Sumac is weird stuff but this mix brings out the best in it. I love mixes that aren’t just spices.
